Summer Lovin...

The weather yesterday was totally giving me summer vibes, and I'm trying to soak it up as much as possible. We enjoyed some family time outside and basked in as much sun as we could. Oh, and did I mention shopping? Yes, I did a little of that too. I have dress envy for all the cute summer looks out right now. I'm realllllly good at window shopping (my husband begs to differ)...so I have chosen some of my favorite dresses currently. They're not to tough on the budget either - which is always a plus! Just Keep Swimming...Just Keep Swimming...

Our first vacation as a family of three is fast approaching and naturally, we are so anxious and excited! Anxious (frightened) to see how London does on the plane, and excited to be together for seven straight days! We will be staying near the ocean and also at a spot with a pool...so this past Sunday we decided it would be a good idea to acclimate London to the water a bit! She was first introduced to a pool at 7 weeks, and loved it, but I didn't know how she would do now that she's 9 months old! Our gym has "family swim," so we tried it out and well, we have a little fishy on our hands! She was skeptical at first, for maaaaybe 5 minutes, but then she was splashing around, smacking the water and kicking her little legs! We had so much fun with her and can't wait to go again! I don't think we will have any trouble on vacation ... London and the water seem to get along just fine! Here are a few pictures from our family swim!

Spring Sandals!

I'm totally ready to bring out my sandals and store away the boots ... just waiting on this weather to cooperate! One day its in the 60's, the next day it's snowing, seriously, mother nature MAKE UP YOUR MIND! Regardless, my sandal game needs a reboot (see what I did there?) and I can't wait to get my hands on some of my personal faves below!

Cinnamon Bun Pancakes

This weekend, Chris and I had an uninterrupted 72 hours together - which probably hasn't happened since our honeymoon last August - and it was pretty great. We were lazy bums around the apartment, watching basketball and eating delicious homemade creations. Sunday morning I figured I should go all out with a little homemade pancake action to cap off an amazing few days. I love the blog A Cozy Kitchen and highly recommend you to check it out for yummy breakfast, apps, dinner, etc ideas. 
The cinnamon bun pancakes are super yummy - the glaze, I would definitely tweak a little because I didn't die over it. I mean, it was good - but not great. With that said - they are definitely worth trying on a weekend/cheat day as a little treat!
Glaze:
1/2 c powdered sugar
1 T milk
1/2 tsp vanilla extract
Pancakes:
1 c flour
2 T sugar
3 tsp cinnamon
1 tsp baking powder
1 tsp baking soda
1/8 tsp salt
1 1/4 c buttermilk
1 large egg
1 T unsalted butter, melted then cooled
Directions: Heat griddle or cast iron skillet and coat with cooking spray or butter.
Whisk together ingredients for glaze and set aside. In a bowl, combine dry ingredients and sift together. Separately mix together wet ingredients (buttermilk, egg, butter) and add to dry. Stir together gently - there should still be some lumps left over - DO NOT OVER MIX. Scoop the batter onto the skillet making the pancakes roughly the same size so they are stackable. (Helpful Hint: They are done when you see little bubbles forming all over) Flip and cook 1-2 minutes more. Transfer to plate and top with glaze - serve with warm maple syrup for that "little something extra!" Enjoy!

Nursery Inspiration!

Our city apartment may be too small for a classic nursery...but that hasn't stopped me from dreaming about the perfect one! Gotta love Pinterest and Etsy...so many fabulous ideas, I could just die! If we end up moving out of downtown Boston, I would love the nursery decor to carry a slightly vintage tone throughout...with whites and creams and natural wood fixtures. I'm not one for crazy color schemes or "winnie the pooh" themes - and thankfully, my husband isn't either! 

 

 

Getting Crafty For Fall!

I've discovered that crafting makes me very happy...and determined that I need to do it more! Last weekend, I bought pumpkins at the farm store at Honey Pot Hill and while they're beautiful as they are, I decided to spice them up a bit! What I did was go about 3 inches from the stem and cut around it to remove the top. Then, I dug out the inside flesh and seeds (I did not save the seeds for roasting...I'm the worst) We have a flower shop at the end of our street so I picked up some sunflowers, greenery, and those little orange balls (my flower lingo game is slacking, apologies), and had the florist pre-cut the stems. I had to trim them up a bit more to make them perfectly settle into the pumpkin correctly. I had a short, circular candle holder (without a candle) that I ended up filling with cold water and using as the vase inside the pumpkin. After arranging the flowers a bit, ta da! I had a fabulous fall bouquet and it's amazing how much it added to our apartment decor.

Baked Apple Crisp Oatmeal

Fall makes me want to cook all day every day! Last night I came across this baked oatmeal recipe on Pinterest and absolutely HAD to try it out with some of the apples I picked this weekend! Chris and I usually eat oatmeal in the morning and I decided it was time to jazz it up a bit since it can get slightly monotonous/boring. Today, I was SO excited to eat breakfast and sample my creation! Wanna know the best part about this dish? It's baked entirely in the crockpot! You just set it and forget it! Chris absolutely loved it (he gave it a 9/10 on the rating scale haha!) 

Here's what you do:

Peel and slice about 5-6 apples and layer on the bottom of the crockpot. Disperse 1/2 cup of brown sugar, 1 Tbsp cinnamon, 2 cups oatmeal, and 4 cups of water on top. Do not stir. Cook on HIGH for 4.5 hours. For the last 30 minutes, add the topping which consists of: brown sugar, flour, baking powder, baking soda, and butter. In the morning, heat it up and serve!

1/4 tsp baking powder

1/4 tsp baking soda
