Sunday are for lounging, brunch, church & lots of family time. Lo and I are so happy to have Daddy back from his work trip...mornings are our favorite when we can all crawl into bed together and have play time before we start the day. I've been wanting to make London some pancakes so she could experiment with something different - so today seemed like the perfect morning! Lo is 9 months old, so while we try to expose her to lots of different tastes and textures, we still like to make sure it's nutritious! Here is the recipe that I whipped up this morning! I just made it up, and thought they turned out quite tasty! Lo seemed to love them so that's all that matters in the end :)
Here's what you need:
- 1/3 c wheat flour
- 1/4 c milk
- 1 egg
- 1 ripe banana
- 2 T apple sauce
- berries of your choosing
Directions: Mix all ingredients together & mash banana, then add. (Super difficult huh? P.S this isn't how I make my actual homemade pancakes, just baby pancakes! Wanted to make that clear!)
Heat stove top to medium heat, coat pan with coconut spray oil and allow pan to heat up for a few minutes. Pour a little batter onto the pan and cook about 2 minutes on both sides. Serve warm. You can top with apple sauce also! I thought the banana made the pancakes nice and moist!
