I spent yesterday afternoon baking cookies for the "cookie swap" at work and also to give to my parents and in-laws! I made a few different kinds of cookies that I had never made before and they came out great! I think lots of people have had the peanut butter cookies with the hershey kiss in the middle...so I will share my recipe for the other kind I made...peppermint chocolate crinkle cookies with hershey kisses! This recipe was amazing and I got it right from good ole Pinterest!
Here's what you'll need:
- 1 & 1/2 cups unbleached, all-purpose flour
- 3/4 cup Dutch-process cocoa (such as Hershey's Special Dark)
- 1.5 teaspoon baking powder
- 1/4 teaspoon kosher salt
- 1 stick (1/2 cup) salted butter, cut into chunks
- 1 1/4 cup sugar
- 3 eggs
- 1/2 teaspoon vanilla
- 1 teaspoon peppermint extract
- 1/2 cup powdered sugar for rolling
- Hershey's Kisses
Directions: Heat oven to 350 degrees. In separate bowl, stir together flour, baking powder, cocoa, and salt. Set aside. Using an electric mixer, beat together butter and sugar until light and fluffy. Beat in eggs, vanilla, and peppermint extract. Gradually add the flour mixture to the wet ingredients, continuously beating on low until combined.
Chill the dough in the refrigerator for an hour (at least 30 minutes if that's all you have!). Gently roll each heaping teaspoon of dough in powdered sugar before placing on cookie sheet LINED WITH PARCHMENT PAPER. Bake for 10 minutes. Remove and immediately press hershey kisses in the center. Allow to cool thoroughly. Enjoy!
